We all love chicken, don’t we?  Wanna make Crispy Fried Chicken Wings on your own? It’s a simple and easy delicious dish. It’s sort of like Munchie and salty which goes super well with a cold beer. It’s one of the easiest fried chicken recipes you’ll ever make.

  • Chicken Wings
  • Fish Sauce
  • White Pepper
  • Cooking Oil


(For this dish, I suggest you use the flat wings because it has higher skin to meat ratio).

  • Put the wings in a flat bowl or container, season it with fish sauce.
  • Toss them and let it marinate for half an hour and then flip them halfway through.
  • Now dry off the marinade by putting it on a paper towel.
  • Sprinkle White pepper on it.
  • Dust the chicken with rice flour/corn flour. (to create moisture from the skin)
  • Once it’s done shake off the excess flour,
  • Heat up your non-stick frying pan with a quarter inch of oil in it.
  • Once you get enough heat shallow fry it on medium flame
  • Keep frying until the colour turns deep golden brown.
  • Then flip it the other side and fry it for another couple minutes.
  • Once it’s cooked, remove and put it in a paper towel.

Make sure the skins are dried. (You don’t need to serve it with sauces, it’s good on its own).

This recipe will show you the magical ingriedents that fish sauce produces, the flavour that comes out of it is incredible.

Shrimp Fried Rice Recipe (Khao Pad Goong)

  1. Shrimp (5-6 pcs)
  2. White onion (small size)
  3. Spring onion (2 pcs)
  4. Beans (4 pcs)
  5. Carrot (1)
  6. Garlic (2-3 cloves)
  7. Egg (1)
  8. Bowl of cooked rice
  9. Red Chillies (3-4)
  10. Fish Sauce (teaspoon)
  11. Soya sauce (tablespoon)
  12. Oyster sauce (tablespoon)
  13. Vegetable oil (3-4 teaspoons)


Take 2-3 garlic, peel and mince them.
Slice onion into wedges lengthwise.
Slice the spring onion bottom roots and cut them finely.
Cut your beans and carrot into smaller pieces.
(In order to make good Shrimp Fried Rice  you need to use rice that day old rice which works very well)

  • Turn on your stove and add about one tablespoon of oil for frying, (make sure the oil is nice and hot).
  • Put the minced garlic and red chillies stir fry it for about 15 sec.
  • Add your shrimp and stir-frying continuously for about 40 sec.
  • Add half of your rice. (a little bit of rice first is going to soak up all those delicious shrimp juices).
  • Crack in an egg and mix it up with your shrimp and rice. Stir-fry until your egg is cooked.
  • Then toss in the rest of your rice give it a quick stir.
  • Add a tablespoon of soya sauce, oyster sauce, fish sauce and a pinch of sugar.
  • Toss in your carrot, beans and sliced onion fry it for another 40 sec.
  • Then the green onions, a few more sec. and remove it from the heat.

You may serve it with cucumber, a squeeze of Lemon and sprinkle of pepper. (You will love the little sour tinge from the lime juice)

Pad is a stir-fry and Gaprao is a basil delicious easy dish super famous which is well known in Thailand. The reason why it is famous in Thailand is because of its aromatic fragrance and abundant availability that grows like weeds which can be found in every corner of the country. In general, the younger the Gaprao (basil) the more aromatic they tend to be.

Ingredients of Pad Gaprao
  1. Boneless Chicken (500 gm)
  2. Red Chilli (fresh)  (4/5 pcs)
  3. Long beans (3/4 pcs)
  4. Garlic (5 pcs)
  5. Fish Sauce (4 tablespoons)
  6. Soya Sauce (5 tablespoons)
  7. Dark Soya Sauce (3 tablespoons)
  8. Mint leaves (handful)
  9. Basil Leaves (handful)
  10. Water
  11. Sugar (1 teaspoon)
  12. Vegetable Oil (4/5 tablespoon)


  • Make a paste with garlic and red chilli which will be the base of the stir fry. Chopped garlic must be kept aside.
  • Take a bowl and mix the sauces (Fish Sauce, Soya Sauce and Dark Soya Sauce) together with Sugar. Add some water and make sure you dissolve the sugar by stiring it well.
  • You can make Pad Gaprao with any kind of meat you want but the most common type is either chicken.
  • Chop the chicken into bite sizes in a chopping board with a big cleaver or a knife.
  • Cut the beans into shorter pieces.
  • Heat up your non stick frying pan with vegetable oil in it.
  • Heat up your non stick frying pan with vegetable oil in it.
  • Now, put the chopped  garlic. Then the garlic and red chilli paste right away. (you don’t have to wait for the oil to get it hot).
  • You may let it cook until the garlic starts to get brown a little bit.
  • Now put the chicken. Cook for 2-3 mins untill the chicken is sort of in smaller pieces.
  • Put the mixed sauce and get it mixed up well with the chicken.
  • Toss your beansin. If you want them nice and soft you want to add them early so maybe at the same time as the sauce. But if you want them to be still crunchy you can wait untill the chicken is mostly done.
  • Now you might add the basil and mint leaves after the heat is off. Just use the residual because you might not want to cook the leaves to death. Just toss it.

Now that’s done. You can just serve your dish with steamed rice and fried egg. You might also want to season it with Sliced Cucumber and a squeeze of Lemon on top of it (optional).
